Ingredients

  • 1 lb. Spaghetti
  • 8 Cloves Garlic sliced
  • ½ C Olive Oil extra virgin
  • ½ C Pasta Water as needed
  • ½ tsp Crushed Red Pepper optional
  • ¼ C Parmesan Cheese fresh grated
  • 2 Tbsp Parsley garnish optional

Instructions

  • Begin by heavily salting boiling water in a large stock pot.
  • Add 1 lb. Spaghetti and cook per package directions.

  • While the pasta cooks, heat 1/2 C Olive Oil on medium heat in medium sauté Pan

  • Add sliced 8 Cloves Garlic and stir being sure not to burn the garlic. After about a minute add in the 1/2 tsp Crushed Red Pepper.

  • As the garlic begins to turn golden but not browned, add in the pasta straight from the stock pot.
    1/2 C Pasta Water
  • Toss the pasta in the olive oil garlic mixture and add in 1/2 C Pasta Water a little bit at a time until it thickens into a sauce. If too dry add in a bit more pasta water. Taste for seasoning and add salt and pepper to taste.
  • Plate immediately and garnish with freshly grated 1/4 C Parmesan Cheese and 2 Tbsp Parsley.
